You will require 20 minutes of preparation time and 10 minutes of cooking time. This will serve 6 guests in all. You can make these crumpet pizzas with your child at home and use whatever vegetables that you have in your refrigerator for creating toppings. Key ingredients include 4 tablespoons of Passata, six crumpets, ½ teaspoons of dried oregano, 4 tablespoons of ketchup, toppings that you choose like olives, pepper, tomatoes and red onions or basil and also 75 grams of grated cheddar cheese. Heat your cooking oven to high. Toast your crumpets in a toaster or in the grill. Mix the ketchup, oregano and passata in a bowl and season it. Chop off toppings into little pieces. Put foil for the baking tray lining and spread your sauce over the crumpets, topping up with vegetables and cheese. Arrange and grill for about 3-4 minutes till the cheese is bubbling and golden. Leave to slightly cool prior to eating.

2. Chicken & Vegetable Bowl-

Chicken & Vegetable Bowl-

Preparation and cooking times are 15 minutes each. This recipe serves four people. You can make this vibrant brown rice, chicken and vegetable meal for guests for lunch/dinner. Add carrots, sweet corn and avocado if possible. You will require 250 grams of basmati rice along with a tablespoon of rapeseed oil, a crushed garlic clove, two sliced chicken breasts, two tablespoons of Hoisin sauce, 100 grams of frozen edamame beans/peas which are defrosted, 100 grams of frozen sweet corn, 100 grams of grated carrots, 100 grams of red peppers which are cut into smaller cubs, a sliced and stoned avocado and a lemon that is cut into quarters.

You will have to cook the rice as per instructions on the pack, drain it and keep in the pan for retaining the warm temperature. Heat oil in a frying pan/wok and add in garlic before frying for two minutes until it turns golden. Tip in your chicken and fry till the pieces are thoroughly cooked. Stir in your Hoisin sauce, season nicely and keep cooking for another two minutes. Cook your edamame beans and sweet corn in two minutes amidst simmering water. Drain it thereafter. Divide rice in four bowls and top with slices of chicken in strips with red pepper, carrot, peas/beans, avocado and sweet corn. Serve with lemon.
